Chicken with porcini mushrooms

Ingredients

FOR 2 PEOPLE: 280 g whole chicken breast - extra virgin olive oil to taste - salt and pepper to taste - 2 sprigs of rosemary - 1 clove of garlic - 2 jars of D'Amico Porcini Mushrooms - 160 g potatoes - 30 g clarified butter

Instructions

Wash the potatoes, peel them, and cut them into wedges. Blanch the potatoes in boiling salted water for 3 minutes.

Drizzle the chicken breast with a little oil and season with salt and pepper. Sear the chicken breast in a hot nonstick pan, caramelizing it on both sides.

Drain the sautéed porcini mushrooms. Place the chicken breast in a baking dish with the potatoes and mushrooms. Add clarified butter with garlic and rosemary. Mix the side dish in the baking dish.

Bake in a hot oven at 350°F for 20 minutes. Remove from the oven and slice the meat. Arrange the meat with the potatoes on a plate and season the meat with the mushrooms and a little cooking sauce.
