Ingredients
FOR 4 PEOPLE:
400 g feta cheese -
300 g cherry tomatoes -
100 g yellow datterino tomatoes -
200 g Castelvetrano Pitted Sweet Olives in brine -
60 g red onion -
extra virgin olive oil to taste -
8 fresh basil leaves -
salt and pepper to taste -
oregano to taste
Instructions
Drain and dry the feta thoroughly on paper towels. Drain the Castelvetrano olives. Wash and cut the tomatoes into wedges. Peel and finely chop the onion.
Place the cherry tomatoes, olives, and onion in a bowl and season with a few basil leaves, salt, pepper, a pinch of oregano, and a drizzle of extra virgin olive oil. Mix well.
Pour half of the seasoned mixture into a baking dish, place the feta slices on top, and spread the remaining mixture around the feta.
Drizzle with a little extra virgin olive oil and bake in a preheated oven at 180°C for 25 minutes. Remove from the oven and serve.
