Gnocchi with pumpkin cream and red beans

Ingredients

FOR 4 PEOPLE: 400 g potato gnocchi - 200 g pumpkin - vegetable broth, as needed - 20 g butter - 20 g onion - 120 g D'Amico Red Beans - 50 g Parmesan cheese - 2 g sage - 30 g olive oil - salt and pepper, as needed

Instructions

Wash and peel the pumpkin, cut it into regular pieces.

In a pot, sauté finely chopped onion in oil and butter. Add the pumpkin and simmer well, adding vegetable broth. Once the pumpkin is well cooked, season with salt and flavor with fresh sage. Blend everything together and, if necessary, adjust the thickness of the cream with more vegetable broth.

Meanwhile, cook the gnocchi in boiling salted water. As soon as they float to the surface, drain and stir in the pumpkin cream, D'Amico red beans, and Parmesan cheese. Plate and serve.
