Ingredients
FOR 4 PEOPLE:
400 g cauliflower -
400 g broccoli -
200 g carrots -
120 g D'Amico Itrana olives -
60 g D'Amico anchovy fillets -
wine vinegar to taste -
30 g extra virgin olive oil -
salt and pepper to taste
Instructions
Pit the olives.
Wash and trim the cauliflower and broccoli, cut into florets and cook separately in boiling salted water. As soon as they are cooked but still fairly crunchy, drain and plunge into ice water. Drain and dry.
Meanwhile, peel the carrots and cut them into rounds about 1 cm thick, then blanch them in salted water for about 3 minutes, drain and plunge into ice water. Drain and set aside.
Place the cauliflower, broccoli, and carrots in a bowl, add the anchovies, Itrana olives, vinegar, salt, and pepper. Mix well and serve.
