Ingredients
FOR 2 PEOPLE:
250 g pangasius fillet -
salt, pepper, thyme to taste -
1 orange -
1 clove of garlic -
20 g rocket -
80 g D'Amico Pistachio Pesto Sauce-
15 g cold water
Instructions
Cut the pangasius fillet into two long pieces and season with oil, salt, pepper, thyme, and orange zest. Roll up the fillets and skewer them with a skewer. Bake in a preheated oven at 350°F for about 8 minutes.
In a small bowl, dilute the pistachio pesto with cold water. Place the rolls on a plate and add the pistachio pesto to the fish. Serve with two slices of orange and some arugula.
