Swordfish rolls with courgettes

Ingredients

FOR 2 PEOPLE: 8 slices of swordfish - 1 jar of D'Amico Rustic Courgettes "Capri Style" - For breading 200 g bread - 100 g breadcrumbs - 5 basil leaves - 50 g grated Parmesan cheese - 1 small bunch of parsley - 0.5 g garlic powder - lemon zest to taste - extra virgin olive oil to taste - salt and pepper

Instructions

Place the bread, garlic, parsley, basil, Parmesan cheese, lemon zest, extra virgin olive oil, salt, and pepper in a blender.

Blend everything together until you have a fragrant herb breadcrumb mixture.

Lay out the swordfish slices and fill them with a little breadcrumb mixture, then roll them up like classic rolls.

Place the rolls in a baking pan lined with parchment paper, sprinkle generously with the breadcrumb mixture to cover the rolls, drizzle with a little oil, and bake in a preheated convection oven at 350°F for 10 minutes.

Drain the D'Amico rustic courgettes "Capri Style" and arrange them on a plate, place the rolls on the plate and serve.
