Lentils with sausage

Ingredients

FOR 4 PEOPLE: 260 g Castelluccio di Norcia PGI D'Amico Lentils - 16 g celery - 60 g carrots - 30 g onions - 60 g zucchini - 1 bay leaf - 200 g fresh sausage - 480 g vegetable broth - 70 g pancetta - 40 g extra virgin olive oil - 1 clove garlic - salt to taste

Instructions

Wash all the vegetables and cut them into brunoise. In a pot, sauté the oil, pancetta, celery, onion, some of the carrots, and a head of garlic.

Then add the lentils and extend with vegetable broth. Flavor with a bay leaf and cook for about 7-8 minutes. Add the sausages, zucchini, and brunoise carrots to the lentils. Cook over low heat. Place the lentils on a plate, cut the sausages, and arrange them on the plate with the lentils.
