Mini ricotta burgers with sun-dried tomato sauce

Ingredients

FOR 4 PEOPLE: 320 g ricotta cheese - 320 g potatoes - 160 g zucchini - 160 g onion - 160 g carrots - 140 g breadcrumbs - 00 flour, as needed - parsley to taste - extra virgin olive oil and salt to taste - D'Amico Sundried Tomato Sauce to taste

Instructions

Peel and wash the vegetables, chop them coarsely, and boil them in plenty of water. Drain the vegetables once cooked and place them in a food processor.

Transfer them to a bowl, add the ricotta, breadcrumbs, chopped parsley, flour, oil, and salt. Mix everything well and use your hands (or a special mold) to form small burgers 5 cm in diameter, placing them on a baking tray lined with parchment paper.

Bake the burgers in a preheated oven at 175°C for 20 minutes. Serve with D'Amico sun-dried tomato sauce.
