Mix the ricotta cheese with the sugar. Add the 6 egg yolks one at a time, stirring constantly, then add all the cooked wheat from the jar and the vial of millefiori flavoring. Add the grated lemon zest, the diced candied fruit, and finally the beaten egg whites to the mixture. Mix until the dough is creamy and smooth.
Prepare the shortcrust pastry by mixing the flour, 2 egg yolks, softened lard, sugar, and salt. Butter and line the baking pan with shortcrust pastry, then pour in the mixture. Decorate the pastiera with strips of shortcrust pastry. Bake in a preheated oven at 350°F for about 1 hour. Allow to cool and dust with powdered sugar.
