Potato and lampascioni salad

Ingredients

FOR 6 PEOPLE: 200 g fresh green beans - 4 medium-sized potatoes - 100 g cherry tomatoes - 80 g D'Amico Wild Onions “Apulian Style”- 1 clove of garlic - oregano to taste - extra virgin olive oil to taste - salt and pepper to taste - 60 g balsamic vinegar glaze - 30 g cold sparkling water - mint to taste

Instructions

For the salad:

cook the potatoes in plenty of salted water. Once cooked, allow to cool, peel and cut into cubes. Blanch the green beans in boiling salted water. Pour everything into a bowl. Add the cherry tomatoes and lampascioni cut in half.

For the dressing:

Pour the balsamic vinegar glaze into a container with 40 g of oil and 30 g of cold sparkling water. Add salt and mint and emulsify until you obtain a sauce. Dress the salad with the sauce.
