Quinoa, bulgur, and vegetable patties

Ingredients

FOR 8 PEOPLE: 1 jar of Quinoa D'Amico - 80 g bulgur wheat - 1 carrot - 1 onion - 40 g celery - fresh thyme to taste - 50 g legume flour - 30 g egg white - 20 g grated Parmesan cheese - breadcrumbs to taste - extra virgin olive oil to taste - salt and pepper to taste

Instructions

Drain the quinoa thoroughly, removing as much water as possible.

Chop the celery, carrots, and onion in a food processor.

Add the quinoa to the vegetables. Add the thyme, Parmesan cheese, bulgur wheat, egg white, salt, and pepper. Mix well. If the mixture is a little soft, add some breadcrumbs.

Form classic meatballs of the same weight, then flatten them slightly.

Drizzle with a little extra virgin olive oil and bake in the oven at 180°C for 25 minutes.

Serve.
