Pasta with black lentils, sun-dried tomatoes, and almonds

Ingredienti

FOR 2 PEOPLE: 180 g small pasta - 1 jar of D'Amico Black Lentils - 15 g extra virgin olive oil - 1 clove of garlic - 1 sprig of thyme - 50 g D'Amico Sundried Tomatoes - 10 g sliced almonds - salt and pepper to taste

Istruzioni

Cook the pasta in boiling salted water. Pour a drizzle of oil into a pan with a clove of garlic and a sprig of thyme. Add the drained black lentils with a ladleful of the pasta cooking water. Leave to flavor over moderate heat for 5 minutes.

Remove 1/3 of the lentils from the heat and blend until creamy. Drain the pasta and toss with the lentils and the cream obtained previously.

Drain and chop the sundried tomatoes and add them to the pasta. Mix, plate and garnish with sliced almonds. Serve.
