Ingredients

  • 1 green round pumpkin of about 1.5 kg
  • 2 pack of D’Amico “PGI Castelluccio di Norcia Lentils”
  • Salt and Pepper to taste
  • Fresh minced parsley

Procedimento

Wash the pumpkin well with running water, using a natural brush to remove any traces of soil.
Dry it and cut the lid.
With a spoon, remove all the seeds and filaments and season with a pinch of salt and pepper.
Wrap in foil with parchment paper and place it on the oven pan preheated to 200° C and ventilated for about 25 minutes.
When the scent begins to spread, check the cooking with a toothpick.
Take the pumpkin out of the oven and put its lid to cook for about 10/15 minutes (will serve as an ornament to the preparation).
Drain the lentils, preserving the liquid you will then use to brush the pumpkin, and put them in a pot to heat for as long as necessary.
When the lentils are ready sprinkle with freshly chopped parsley.
Fill the pumpkin with lentils, brush with the liquid you had put aside and close by placing over its beautiful lid previously prepared.
